Dialed In

I've experimented with a variety of espresso blends, but the one I keep returning to is Illy classico. I'm currently using a La Pavoni manual espresso machine and Baratza Virtuoso grinder. Here's my ritual:

  • Grind 15g of coffee at 2 clicks from left on Baratza Virtuoso
  • Tamp, lock in portafilter, and raise lever for 6 second pre-infusion
  • Pull lever down for about 15 seconds
  • Coffee should drip for about 5 seconds
  • Overall time should be between 25 and 30 seconds
